Flavored Whipped Cream

The way to add a flavor or essence to whipped cream is not to add a syrup or oil to the cream before whipping; this prevents the cream from setting in the way one would want. The preferred approach unfortunately takes quite a bit of time, and only works for some flavors. In order to flavor whipped cream, one actually flavors the sugar instead. When one has flavored sugar, one may simply make whipped cream as normal.

Cream has a very subtle flavor which compliments nearly everything. Many of the inobvious flavored sugars have absolutely wonderful effects as whipped creams; in particular, violet, yellow saffron, mint, vanilla, honey, chocolate, clover, tequila, scotch, cinnamon, coffee and various teas make good flavorings.
